Roasted Red Pepper Balsmic Dressing

Ingredients

1 sweet red pepper

1 clove garlic minced or 1 head roasted garlic

1/4 cup balsamic vinegar

1/2 tsp salt

1/2 tsp pepper

2 Tbsp chopped fresh basil

2 Tbsp olive oil

2 Tbsp water

Directions

Cut pepper in half and remove seeds and core.
Grill pepper under broiler, skin side up, until browned and blistered. Cool. Rub off skin.
In a food processor blender, puree pepper with garlic, vinegar, salt, pepper, basil, oil and water. Taste and adjust seasonings if necessary.
